Grilled chicken with charred broccolini and blistered tomatoes
- 2 x 8oz boneless skinless chicken breast
- 1 bundle broccolini
- 1 pint heirloom cherry tomatoes
- 1 tablespoon extra virgin olive Oil
- 1 tablespoon dijon mustard
- fresh rosemary
- fresh basil
- aged balsamic vinegar
- kosher salt and pepper
Season chicken with salt and pepper. Rub with Dijon mustard, Olive oil and fresh rosemary. Drizzle a little bit of olive oil over the broccolini and cherry tomatoes.
Place chicken, broccolini and tomatoes on hot grill pan, season vegetables with salt and pepper.
Grill 2 to 3 minutes on each side turning once until chicken is cooked through
Place vegetables on the bottom of a plate. Drizzle a little bit of balsamic vinegar over tomatoes and garnish with fresh basil. Please chicken on top of vegetables and serve.
