Grilled chicken with charred broccolini and blistered tomatoes

  • 2 x 8oz boneless skinless chicken breast
  • 1 bundle broccolini
  • 1 pint heirloom cherry tomatoes
  • 1 tablespoon extra virgin olive Oil
  • 1 tablespoon dijon mustard
  • fresh rosemary
  • fresh basil
  • aged balsamic vinegar
  • kosher salt and pepper
  1. Season chicken with salt and pepper. Rub with Dijon mustard, Olive oil and fresh rosemary. Drizzle a little bit of olive oil over the broccolini and cherry tomatoes.

    Place chicken, broccolini and tomatoes on hot grill pan, season vegetables with salt and pepper. 

    Grill 2 to 3 minutes on each side turning once until chicken is cooked through

    Place vegetables on the bottom of a plate. Drizzle a little bit of balsamic vinegar over tomatoes and garnish with fresh basil. Please chicken on top of vegetables and serve.
