- 1 lb ground chicken
- 1 24 oz. jar good marinara sauce
- 1/2 cup red wine
- 1 tablespoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon black pepper
- 2 teaspoons kosher salt
- 4 cups cooked quinoa
Boil quinoa for 10 to 15 minutes until tender and drain just as you would pasta.
Place ground chicken and all other ingredients into a pot over high heat.
Using a potato masher break down the meat until small pieces form. Cover with lid and cook for 10 minutes, mashing once or twice with the potato masher. Dress quinoa with desired amount of Bolognese sauce and mix. Garnish with fresh chopped basil, grated Parmesan cheese and crushed red pepper if desired.
