Creating fun ways to update easy recipes for kids has become a priority for me around many different occasions throughout the year! Halloween being one of the most creative holidays; I invite my daughter into the kitchen with me to develop spooky & delicious meals that both her friends and their parents enjoy!
Adding props to visually enhance the dishes either individually or on a buffet for a party is a another fun tip that I do to really bring out the Halloween spirit!
Vampire Soup
A spooky fun version of a healthy tooato soup recipe that both kids & adults will love!
- 1 large onion diced
- 3 cloves garlic chopped
- 1 tbls 1tablespoon olive oil
- 1 24oz. can fire-roasted crushed tomatoes
- 2-3 cups chicken or vegetable stock
- 2 tsp sugar
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup low-fat sour cream or Greek yogurt for web garnish
Place onion, garlic and olive oil into a soup pot.
Cook over medium heat about 10 minutes until tender and transparent
Add remaining ingredients
Bring to a boil then reduce to a simmer for 20 minutes with lid slightly ajar
Place soup in Vitamix blender in small batches and purée until completely blended, about 10-15 seconds until all of the soup is puréed
Taste for seasoning and then place in bowls to serve
Garnish with a little sour cream to make a web design using a pointed utensil like a wooden skewer or a toothpick
