Vampire Soup

Creating fun ways to update easy recipes for kids has become a priority for me around many different occasions throughout the year! Halloween being one of the most creative holidays; I invite my daughter into the kitchen with me to develop spooky & delicious meals that both her friends and their parents enjoy!

Adding props to visually enhance the dishes either individually or on a buffet for a party is a another fun tip that I do to really bring out the Halloween spirit!

Vampire Soup

A spooky fun version of a healthy tooato soup recipe that both kids & adults will love!

  • 1 large onion diced
  • 3 cloves garlic chopped
  • 1 tbls 1tablespoon olive oil
  • 1 24oz. can fire-roasted crushed tomatoes
  • 2-3 cups chicken or vegetable stock
  • 2 tsp sugar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup low-fat sour cream or Greek yogurt for web garnish
  1. Place onion, garlic and olive oil into a soup pot.

  2. Cook over medium heat about 10 minutes until tender and transparent

  3. Add remaining ingredients

  4. Bring to a boil then reduce to a simmer for 20 minutes with lid slightly ajar

  5. Place soup in Vitamix blender in small batches and purée until completely blended, about 10-15 seconds until all of the soup is puréed

  6. Taste for seasoning and then place in bowls to serve

  7. Garnish with a little sour cream to make a web design using a pointed utensil like a wooden skewer or a toothpick

Ingredients: 

One large onion diced

1-24 ounce can of fire-roasted crushed tomatoes

2 to 3 cups of chicken or vegetable stock

2 teaspoons of sugar

1 teaspoon kosher

1/2 teaspoon black pepper

1/2 a cup of low-fat sour cream or Greek yogurt for web garnish

Procedure: 

Place onion, garlic and olive oil into a soup pot. Cook over medium heat about 10 minutes until tender and transparent. Add remaining ingredients, bring to a boil then reduce to a simmer for 20 minutes with lid slightly ajar.
