Low Carb Easy Chicken Meatballs 4 Ways
- 1 pound Ground Chicken
- 1/2 cup Gluten Free Breadcrumbs
- 1 Egg
- 1/4 cup Parmesan Cheese
- 2 tsp. Onion Powder
- 1 tsp. Garlic Powder
- 1 tsp. Black Pepper
- 2 tsp. Kosher Salt
- 2 tsp. Dried Oregano
- 1 tsp. Dried Basil
- 1 tsp. Fennel Seed
Add all ingredients into a bowl and mix until well incorporated
The colder the chicken is the better your meatballs will form
Roll into golf ball size and place in a saute pan
Add one cup water, cover with a lid, bring to a boil
Reduce to a simmer & cook for 30 minutes. While simmering, turn meatballs and add a bit more water if needed. Cover and cook for an additional 30 minutes
Remove from heat and discard any liquid left in the pan
Add meatballs to the following for 4 different delicious meals
Have meatballs with gluten-free pasta for a healthy spaghetti & meatball meal!
Have them with marinara sauce & grated parmesan cheese & basil for a low carb keto snack or meal
Have them as a meatball sub with melted mozzarella
Slice them and layer between sheets of lasagna with sauce & cheese
Meatballs can be stored in the refrigerator for up to three days or frozen for up to two months in an airtight plastic container.
