Chicken Grapefruit Avocado Salad with Ginger Sesame Dressing

  • 1 bag Pre-washed organic butter lettuce
  • 1 large Pink grapefruit
  • 1 large Avocado peeled & cut
  • 10 oz. Cooked boneless chicken meat (white or dark or any leftover cooked chicken)
  • 1/4 cup Toasted slivered almonds
  • A few shavings of thinly sliced red onion
  • 2 tsp. Sesame seeds for garnish (optional)

For the Dressing

  • 1 tsp. Grated ginger
  • 1 tsp. Soy sauce (or Tamari – gluten free soy)
  • 1/2 tsp. Sugar
  • 2 tbsp. Seasoned Rice Vinegar
  • 2 tsp. Sesame Oil
  • 2 tsp. Sesame seeds
  • 1 tsp. Dijon mustard
  • 1/4 tsp. Black Pepper
  1. For the Dressing: Place all ingredients in a small mason jar and shake well or whisk in a small bowl.

    Scatter butter lettuce on the bottom of a large serving platter and top with remaining items. Drizzle dressing over salad or serve on the side.
