Low Carb Easy Chicken Meatballs 4 Ways

  • 1 pound Ground Chicken
  • 1/2 cup Gluten Free Breadcrumbs
  • 1 Egg
  • 1/4 cup Parmesan Cheese
  • 2 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 tsp. Black Pepper
  • 2 tsp. Kosher Salt
  • 2 tsp. Dried Oregano
  • 1 tsp. Dried Basil
  • 1 tsp. Fennel Seed
  1. Add all ingredients into a bowl and mix until well incorporated

  2. The colder the chicken is the better your meatballs will form

  3. Roll into golf ball size and place in a saute pan

  4. Add one cup water, cover with a lid, bring to a boil

  5. Reduce to a simmer & cook for 30 minutes. While simmering, turn meatballs and add a bit more water if needed. Cover and cook for an additional 30 minutes

  6. Remove from heat and discard any liquid left in the pan

Add meatballs to the following for 4 different delicious meals

  1. Have meatballs with gluten-free pasta for a healthy spaghetti & meatball meal!

  2. Have them with marinara sauce & grated parmesan cheese & basil for a low carb keto snack or meal

  3. Have them as a meatball sub with melted mozzarella

  4. Slice them and layer between sheets of lasagna with sauce & cheese

Meatballs can be stored in the refrigerator for up to three days or frozen for up to two months in an airtight plastic container.
