Grilled filet mignon with grilled mushrooms and arugula salad
- 2 x 8 oz filet mignon
- 8 oz any mushroom variety
- 1 bag pre-washed baby arugula
- 1 tablespoon lemon sliced in half
- extra virgin olive oil
- shaved pecorino romano cheese
- kosher salt and pepper to taste
Slice each filet mignon steak into four thin slices, season with salt and pepper and drizzle with a little bit of extra virgin olive oil
Drizzle a little olive oil on the mushrooms and lemon halves
Place steaks, mushrooms and lemon on a hot grill pan and cook 2 to 3 minutes on each side.
While steak is cooking prepare arugula salad. Place arugula into a large bowl and dress with 1/2 of the grilled lemon, a tablespoon of olive oil and a little salt and pepper.
Place salad on the bottom of a plate and top with grilled mushroom and grilled steak and garnish with shaved Pecorino Romano cheese. Squeeze grilled lemon over steak.
