Pavlova
- KitchenAid Stand Mixer
- Platter or Cake Sand
- Rubber Spatula
- Small Metal Spatula
- 5 Egg whites (room temperature)
- 1 pinch Kosher salt
- 1 cup Sugar (superfine)
- 1/2 tsp White vinegar
- 1/4 tsp Vanilla extract
- 2 tsp Corn starch
For the whipped cream
- 1 1/2 cups Heavy whipping cream (for garnish)
- 4-5 cups Fresh berries (or any fruit you like)
- 3-4 sprigs Fresh mint
- Powdered sugar (for dusting – optional)
Preheat oven to 275 degrees
Place oven rack on the lowest shelf
Place a sheet of non-stick foil or parchment paper onto baking sheet
Using an 8" to 9" cake pan, place on paper and outline a circle using a dull pencil or chopstick to create an outline for the shape of your meringue
If using a pencil, turn paper upside down so that the pencil is on the bottom side
Place egg whites and a pinch of salt in a KitchenAid stand mixer with a wire whisk attachment. You can use a hand held mixer but it will take longer
Whisk whites until very frothy (about 2 minutes)
Add 1 tablespoon of sugar at a time over medium speed
Once all of the sugar is incorporated, place mixer on high speed for four minutes until shiny and glossy and whites have formed a stiff peak
Add vanilla, vinegar and cornstarch, mix until well incorporated
Using a rubber spatula, pour the meringue onto the center of the paper or foil
Shape the meringue into a round disc while forming the sides upwards
Place in oven for 90 minutes. After 90 minutes, turn off the oven but leave the meringue in the oven until it completely cools (about another hour)
Place meringue onto cake stand or decorative platter
Top with fresh whipped cream and fresh berries (whipped cream instructions below)
Dust with powdered sugar and garnish with fresh mint sprigs
Use a serrated knife to cut the Pavlova into 8-10 servings
To make the whipped cream
Place the heavy cream into a KitchenAid stand mixer with a wire whisk attachment and beat on medium to high speed until soft peaks form
Pavlova can be made throughout the year. Just use your favorite selection of seasonal berries, stoned fruits, etc…This dessert is definitely a crowd pleaser!
