Shaved Brussels Sprouts Salad w/ Pink Lady Apples, Pomegranate Seeds & Toasted Almonds

  • Large cutting board
  • Large Chef Knife
  • Mandoline Slicer
  • Prep/mixing bowls
  • Storage Containers
  • 1 pound Brussels sprouts (shaved)
  • 1 Pink Lady apple (cut into matchsticks)
  • 1/2 cup Fresh pomegranate seeds
  • 1/2 cup Slivered almonds (toasted)

Honey & Apple Cider Vinaigrette

  • 1 tsp Shallot (chopped)
  • 1 tbls Dijon mustard
  • 1/3 cup Apple cider vinegar
  • 3 tbls Honey
  • 1/3 cup Avocado oil
  • 2 pinches Kosher salt
  • 2 pinches Pepper

For the Dressing

  1. Place everything into a mason jar and shake well or add all ingredients to a small bowl and whisk until incorporated

For the Salad

  1. Place all ingredients into a large bowl

  2. Toss with a few tablespoons of dressing. Add more dressing if desired

Salad can be made one day in advance and dressed just before serving.

Vinaigrette can be stored in the refrigerator in an airtight container for up to one week.
