Baked tofu noodle salad
- 1 package tofu noodles
- 1 package baked teriyaki tofu – sliced
- 2 cups shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup toasted almonds
- 1 tablespoon toasted flax seeds
- 1 tablespoon sliced scallions
- 1 tablespoon chopped cilantro
- Sesame yuzu dressing:
- 1/4 cup rice vinegar (seasoned)
- 1 tablespoon sesame oil
- 1 teaspoon dijon mustard
- 1 teaspoon yuzu extract
- 1/2 teaspoon grated ginger
- 1/2 teaspoon crushed garlic
- kosher salt and pepper to taste
Place two cups of the cabbage in a large bowl. Rinse and drain tofu noodles. Place the tofu noodles over shredded cabbage and top with all other remaining ingredients.
Place all ingredients for dressing in a bowl a whisk. Pour over salad.
