Quinoa garbanzo veggie bowl

  • 1 1/2 cups cooked quinoa
  • 1 cup drained canned garbanzo beans
  • 1/2 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 1/2 cup thinly sliced red bell pepper
  • 1 tablespoon hemp seeds
  • 1 tablespoon chives for garnish
  • Dressing:
  • ½ cup coconut milk
  • 1 tablepsoon curry powder
  • 1 teaspoon grated ginger
  • 1 teaspoon crushed garlic
  • 1 teaspoon fish sauce
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  1. Place quinoa in the bottom of a large bowl. Top with all remaining ingredients and garnish with chives.

    For the dressing place all ingredients in a bowl and whisk. Pour over salad and serve.
