Baked tofu noodle salad

  • 1 package tofu noodles
  • 1 package baked teriyaki tofu – sliced
  • 2 cups shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup toasted almonds
  • 1 tablespoon toasted flax seeds
  • 1 tablespoon sliced scallions
  • 1 tablespoon chopped cilantro
  • Sesame yuzu dressing:
  • 1/4 cup rice vinegar (seasoned)
  • 1 tablespoon sesame oil
  • 1 teaspoon dijon mustard
  • 1 teaspoon yuzu extract
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon crushed garlic
  • kosher salt and pepper to taste
  1. Place two cups of the cabbage in a large bowl. Rinse and drain tofu noodles. Place the tofu noodles over shredded cabbage and top with all other remaining ingredients.

    Place all ingredients for dressing in a bowl a whisk. Pour over salad.
