Chicken Grapefruit Avocado Salad with Ginger Sesame Dressing
- 1 bag Pre-washed organic butter lettuce
- 1 large Pink grapefruit
- 1 large Avocado peeled & cut
- 10 oz. Cooked boneless chicken meat (white or dark or any leftover cooked chicken)
- 1/4 cup Toasted slivered almonds
- A few shavings of thinly sliced red onion
- 2 tsp. Sesame seeds for garnish (optional)
For the Dressing
- 1 tsp. Grated ginger
- 1 tsp. Soy sauce (or Tamari – gluten free soy)
- 1/2 tsp. Sugar
- 2 tbsp. Seasoned Rice Vinegar
- 2 tsp. Sesame Oil
- 2 tsp. Sesame seeds
- 1 tsp. Dijon mustard
- 1/4 tsp. Black Pepper
For the Dressing: Place all ingredients in a small mason jar and shake well or whisk in a small bowl.
Scatter butter lettuce on the bottom of a large serving platter and top with remaining items. Drizzle dressing over salad or serve on the side.
