Quinoa garbanzo veggie bowl
- 1 1/2 cups cooked quinoa
- 1 cup drained canned garbanzo beans
- 1/2 cup shredded red cabbage
- 1/2 cup shredded carrots
- 1/2 cup thinly sliced cucumber
- 1/2 cup thinly sliced red bell pepper
- 1 tablespoon hemp seeds
- 1 tablespoon chives for garnish
- Dressing:
- ½ cup coconut milk
- 1 tablepsoon curry powder
- 1 teaspoon grated ginger
- 1 teaspoon crushed garlic
- 1 teaspoon fish sauce
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Place quinoa in the bottom of a large bowl. Top with all remaining ingredients and garnish with chives.
For the dressing place all ingredients in a bowl and whisk. Pour over salad and serve.
